• Do you ever visit the Jamie Oliver website? I’d really recommend it, there are so many fabulous and easy recipes, so much inspiration if you’re stumped and some great videos on their Food Tube channel.

I’m a big fan of figs and of crostini too – this recipe is easy peasy and such a crowd pleaser!

    Prosciutto, Figs & Mint Crostini

    6 large ripe figs

    12 slices quality prosciutto

    1 small bunch fresh mint

    extra virgin olive oil

    balsamic vinegar

    freshly ground black pepper

Get yourself 6 large ripe figs, 12 slices of prosciutto and a small bunch of fresh mint. Tear the figs in half, then drape a piece of prosciutto over each of your hot crostini and squash a piece of fig on top. Finish with mint leaves, and serve drizzled with a little extra virgin olive oil, a drop of balsamic vinegar and some freshly ground black pepper.

I bought some figs from Melissa’s last week and they were delicious – anybody know if Woolies has in store?

Looks absolutely scrumptuous – had pea, mint crostini at Jonkershuis at Groote Constantia last night as a starter – delish – we took Stu & Valma there to celebrate his 40th birthday – still, hot evening – not a breath of wind and that divine view to the coast – and good food – perfection!
