Hello lovelies. It’s time for another #tea4kidz recipe using the Laager Peach & Apricot rooibos tea! Our kids have been loving it warm or cold and I’m so excited that this recipe using actual rooibos tea leaves worked so beautifully.
As I mentioned in my last post I’ve been trying to take control of the girls being on the rubbish food train. So with that in mind and after a little trial and error, I came up with these fruity rooibos granola squares. They are CRAMMED with deliciousness and good-for-you nuts, seeds and fruit but the secret ingredient is the Peach and Apricot Rooibos rooibos tea that you toast with the seeds – it gives such a fruity and malty taste to them plus the fact that rooibos has so many things going for it from powerful flavonoids to antioxidants makes me feel like an even better citizen!
They’re super easy to make and I must say filling a Tupperware with them, ready for the school week, felt very gratifying. The Captain LOVES granola and he’s also been tucking into them so it’s a win win…as with any ingredient, the better quality of product, the better the result. I used organic oats and raw honey and my favourite Nomu vanilla extract and of course Laager Tea4Kidz Peach & Apricot Rooibos
1 Cup Raw Rolled oats
1 Cup Mixed Nuts (the mix i bought had almonds, macadamias, pecans, pumpkin and sunflower seeds) – i whizzed them up slightly in my Greenis – so much easier than hand chopping
1/2 cup coconut – i used the largest desiccated flake i could find
1/2 cup seed mix (i used the Health Connection one with flaxseeds, sesame an linseeds)
10 Laager Tea4Kids Peach & Apricot rooibos teabags, opened
3 Tbsp butter
2/3 cup honey
1/4 cup sugar or sugar substitute
Pinch coarse salt 1.5 tsp vanilla extract 1.5 cups chopped dried peaches and apricots
Mix the nut, seed mixture together well and spread onto a baking tray then sprinkle over the contents of the tea bags – toast at 190 degrees for 10-15 minutes, stirring every few minutes to ensure even toasting
While the nuts etc are toasting, melt butter in saucepan and add sugar, honey, salt and vanilla – melt together until sugar dissolved
Remove toasted nuts and combine with the butter honey mixture in a large bowl
Now press firmly into a deep sided baking tray
Return the mixture to the oven for 10 minutes and bake until golden
Cool in the fridge and slice into squares after an hour
Return to the fridge to cool further then transfer to an airtight container – keeps for a week.
