• My friend Chloe has a holiday home that her entire extended family descends to every year and to be included in the festivities is an utter joy. I first came across Christmas Pudding Ice Cream one boxing day – her aunt is famous for it and it is a winner way to use up the cake and pud that wasn’t devoured on Christmas Day…I’m pretty sure her recipe is much more sophisticated than mine, but here’s a cheat’s version


    You’ll need:

    • A litre of good quality vanilla ice cream

    • Christmas pudding and/or Christmas cake, crumbled (about 2 cups)

    • Chopped cherries and crushed Chuckles

    • Suitable bowl or mould


    • Allow the ice cream to soften slightly

    • Mix the crumbled, chopped, crushed mix into the ice cream

    • Place in a suitable bowl and refreeze

    When you’re ready to serve, place the frozen bowl in a little hot water in a sink for a few seconds. Place a plate over the top and turn over. Decorate with fruit or chocolate shavings or both.
