• Hi Lovelies! Sorry no post yesterday, i’m a little swamped but i’ll be back up to speed over the weekend! Here is a quick post which i think could be such fun for a kids party, a baby shower or a just-because playtime in the kitchen moment. Can you tell i have a SERIOUS sweet tooth at the moment? I’m generally a fan of English style fudge made with butter and sugar BUT i am useless at it – and i’m fascinated by the plethora of American recipes that call for cake box mix in them these days …this is one of them!

    1 can sweetened condensed milk

    100g white chocolate chips

    1 cup white cake mix

    1/3 cup sprinkles, plus more for topping

    Line a 20x20cm baking pan with parchment or wax paper.

    In a medium saucepan, combine the condensed milk and white chocolate.Cook over low heat, stirring constantly, until the chocolate is melted. Remove from the heat and stir in the cake mix. The mixture may start to firm up; this is okay. Gently fold in the sprinkles.

    Pour the fudge into the prepared pan. Use a rubber spatula to smooth and flatten the top. Top the fudge with extra sprinkles, if you like. Transfer the fudge to the refrigerator to set for about 2 hours. Once chilled, remove from the fridge and cut into two-inch pieces.
